Description

Easy Italian Drunken Noodles are a unique fusion dish that combines the savory richness of Asian Drunken Noodles with Italian flavors. This dish features tender pasta coated in a deeply savory sauce made from crushed tomatoes, balsamic vinegar, and Italian herbs, making it comforting and satisfying for any occasion.

1 tablespoon Olive Oil
1 pound Boneless, Skinless Chicken Breast, cut into 1-inch pieces
1 Yellow Onion, chopped
4 cloves Garlic, minced
1 Red Bell Pepper, cored and chopped
1 Green Bell Pepper, cored and chopped
1 (28-ounce) can Crushed Tomatoes
2 tablespoons Tomato Paste
1 cup Chicken Broth
2 tablespoons Balsamic Vinegar
1 tablespoon Soy Sauce (low sodium preferred)
1 teaspoon Granulated Sugar
1 teaspoon Dried Italian Seasoning
1/2 teaspoon Red Pepper Flakes (or more, to taste)
Salt and Freshly Ground Black Pepper, to taste
1 pound Pasta (such as Spaghetti, Linguine, or Fettuccine)
1/2 cup Fresh Basil Leaves, chopped (for garnish)
1/4 cup Fresh Parsley, chopped (for garnish)


Instructions

  1. Step 1: Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1 cup of the starchy pasta water. Set both aside
  2. Step 2: Sauté the Chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside
  3. Step 3: Sauté Aromatics: Reduce heat to medium. Add the chopped onion and cook until softened, about 5 minutes. Add minced garlic and bell peppers, sauté for another 3-4 minutes
  4. Step 4: Build the Sauce Base: Push vegetables to one side, add tomato paste to the empty side, cook for about 1 minute, then stir the tomato paste into the vegetables
  5. Step 5: Simmer the Sauce: Add crushed tomatoes, chicken broth, balsamic vinegar, soy sauce, sugar, Italian seasoning, and red pepper flakes. Stir, bring to a simmer, then cover and cook for at least 10 minutes
  6. Step 6: Combine & Finish: Return chicken to the skillet, add drained pasta, and toss together. If sauce is too thick, add reserved pasta water
  7. Step 7: Garnish and Serve: Season with salt and pepper, stir in fresh basil and parsley, and serve immediately

Notes

Reserve pasta water for adjusting sauce consistency.

Adjust red pepper flakes based on spice preference.
