Ingredients
- 1 tablespoon olive oil or butter
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon grated fresh ginger
- 6 cups low-sodium chicken broth
- 2 cups cooked shredded chicken
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon turmeric
- 1 teaspoon dried thyme
- Juice of 1/2 lemon
- Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté 5 minutes.
2. Add garlic and ginger; cook 1 minute until fragrant.
3. Pour in chicken broth, turmeric, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer for 15 minutes.
4. Add shredded chicken and cook 10 more minutes.
5. Stir in lemon juice, taste and adjust seasonings.
6. Serve hot, garnished with parsley.
