Easy French Onion Meatloaf is a savory and comforting meal featuring caramelized onions and seasoned ground beef baked to juicy perfection.


Ingredients

  • 1 1/2 pounds ground beef
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Optional: fresh parsley for garnish

Instructions

1. Preheat the oven to 350°F (175°C).

2. Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized, about 15-20 minutes. Add garlic and cook 1 minute; remove from heat.

3. In a large bowl, soak breadcrumbs in milk for 5 minutes.

4. Add ground beef, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and caramelized onions with garlic to the bowl.

5. Mix gently until combined.

6. Transfer the mixture to a loaf pan or shape into a loaf on a baking sheet.

7. Spread extra ketchup on top of the meatloaf.

8. Bake for 60-70 minutes or until cooked through (internal temperature 160°F/71°C).

9. Let rest for 10 minutes before slicing.

Notes

For make-ahead, prepare mixture and refrigerate overnight before baking.

Use fresh breadcrumbs soaked in milk for best texture.

Resting meatloaf helps retain moisture.

Reheat leftovers covered in oven or microwave until warmed through.

Substitute ground turkey for a leaner version.
