Description

This Easy Cucumber Caprese Salad is a refreshing and colorful side dish that combines crisp cucumbers, juicy tomatoes, and creamy mozzarella, all drizzled with olive oil and balsamic glaze. It's perfect for summer gatherings or as a light meal.


Ingredients

2 large English cucumbers, thinly sliced
1 pint cherry or grape tomatoes, halved
8 ounces fresh mozzarella balls, drained and halved
1/2 cup fresh basil leaves, gently tor
3 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper


Instructions

  1. Wash the cucumbers thoroughly. Slice the cucumbers into thin rounds and arrange on a serving platter
  2. Wash and halve the cherry or grape tomatoes, scattering them over the cucumbers
  3. Drain the fresh mozzarella balls and distribute them among the cucumbers and tomatoes
  4. Tear the fresh basil leaves and sprinkle them generously over the salad
  5. Drizzle the extra virgin olive oil and balsamic glaze over the salad. Season with sea salt and black pepper to taste
