Ingredients
2 large English cucumbers, thinly sliced
1 pint cherry or grape tomatoes, halved
8 ounces fresh mozzarella balls, drained and halved
1/2 cup fresh basil leaves, gently tor
3 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Instructions
- Wash the cucumbers thoroughly. Slice the cucumbers into thin rounds and arrange on a serving platter
- Wash and halve the cherry or grape tomatoes, scattering them over the cucumbers
- Drain the fresh mozzarella balls and distribute them among the cucumbers and tomatoes
- Tear the fresh basil leaves and sprinkle them generously over the salad
- Drizzle the extra virgin olive oil and balsamic glaze over the salad. Season with sea salt and black pepper to taste
