Description

Easy cruffins are a delightful hybrid pastry, combining the flaky layers of a croissant with the individual shape of a muffin. This recipe simplifies the croissant-making process, resulting in a delicious treat that's perfect for breakfast, brunch, or dessert.

¾ cup warm milk
¼ cup granulated sugar, plus 1 teaspoon for yeast activatio
1 large egg
3 cups all-purpose flour, plus extra for dusting
1 teaspoon salt
½ cup unsalted butter, melted and cooled
1 cup unsalted butter, softened but still cool
½ cup granulated sugar for rolling (optional)
2 teaspoons ground cinnamon (optional)


Instructions

  1. Activate the yeast by combining warm milk, 1 teaspoon sugar, and active dry yeast in a bowl. Let it sit until frothy
  2. Prepare the dough by mixing the remaining sugar, egg, melted butter, flour, and salt with the yeast mixture until a shaggy dough forms
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Let it rise covered until doubled in size
  4. Punch down the dough, shape into a rectangle, wrap in plastic, and refrigerate for at least 30 minutes
  5. Prepare the butter for laminating by flattening it between parchment paper into an 8×8-inch square and refrigerate
  6. Roll the chilled dough into a 16×8-inch rectangle and place the butter in the center. Fold and roll again, then fold into thirds and refrigerate
  7. Repeat the folding process, rolling and chilling the dough twice more
  8. Roll the dough into a large rectangle, brush with butter, and sprinkle with sugar and cinnamon if desired
  9. Roll the dough tightly to form a log, then cut in half lengthwise and twist the strips
  10. Coil the twisted dough into a spiral and place in a greased muffin tin. Repeat for all cruffins
  11. Cover and let proof until puffy, then bake at 375°F for 20-25 minutes until golde
  12. Cool in the muffin tin for 5 minutes before transferring to a wire rack
