Ingredients
2 ½ teaspoons active dry yeast
¾ cup warm milk
¼ cup granulated sugar, plus 1 teaspoon for yeast activatio
1 large egg
3 cups all-purpose flour, plus extra for dusting
1 teaspoon salt
½ cup unsalted butter, melted and cooled
1 cup unsalted butter, softened but still cool
½ cup granulated sugar for rolling (optional)
2 teaspoons ground cinnamon (optional)
Instructions
- Activate the yeast by combining warm milk, 1 teaspoon sugar, and active dry yeast in a bowl. Let it sit until frothy
- Prepare the dough by mixing the remaining sugar, egg, melted butter, flour, and salt with the yeast mixture until a shaggy dough forms
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Let it rise covered until doubled in size
- Punch down the dough, shape into a rectangle, wrap in plastic, and refrigerate for at least 30 minutes
- Prepare the butter for laminating by flattening it between parchment paper into an 8×8-inch square and refrigerate
- Roll the chilled dough into a 16×8-inch rectangle and place the butter in the center. Fold and roll again, then fold into thirds and refrigerate
- Repeat the folding process, rolling and chilling the dough twice more
- Roll the dough into a large rectangle, brush with butter, and sprinkle with sugar and cinnamon if desired
- Roll the dough tightly to form a log, then cut in half lengthwise and twist the strips
- Coil the twisted dough into a spiral and place in a greased muffin tin. Repeat for all cruffins
- Cover and let proof until puffy, then bake at 375°F for 20-25 minutes until golde
- Cool in the muffin tin for 5 minutes before transferring to a wire rack
