Description

A quick and flavorful baked chicken casserole packed with Mexican-inspired ingredients like cheese, salsa, and spices, perfect for busy weeknights.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (4 oz) diced green chilies
  • 1/2 cup chopped onion
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Optional: sour cream, chopped cilantro, jalapeños

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. Mix shredded chicken, rice, beans, salsa, chilies, onion, spices in a large bowl.
  3. Transfer mixture into the prepared dish and spread evenly.
  4. Sprinkle cheese over the top.
  5. Cover with foil and bake for 20 minutes.
  6. Remove foil, bake an extra 10 minutes until bubbly and cheese melts.
  7. Let sit for 5 minutes before slicing and serving.
  8. Optional: Garnish with sour cream, cilantro, or jalapeños.

Notes

Can prepare and assemble a day ahead, then bake before serving.

Use cooked quinoa or brown rice for a healthier twist.
