- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (4 oz) diced green chilies
- 1/2 cup chopped onion
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- Optional: sour cream, chopped cilantro, jalapeños
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- Mix shredded chicken, rice, beans, salsa, chilies, onion, spices in a large bowl.
- Transfer mixture into the prepared dish and spread evenly.
- Sprinkle cheese over the top.
- Cover with foil and bake for 20 minutes.
- Remove foil, bake an extra 10 minutes until bubbly and cheese melts.
- Let sit for 5 minutes before slicing and serving.
- Optional: Garnish with sour cream, cilantro, or jalapeños.

Can prepare and assemble a day ahead, then bake before serving.
