Description
This Easy Broccoli Cheddar Chicken and Rice Casserole is a cheesy one-pan wonder packed with tender chicken, fluffy rice, and broccoli in a creamy cheddar sauce. Comfort food at its best!
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups instant rice
- 2 cups broccoli florets
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 2 cups shredded cheddar cheese, divided
- 1 cup milk
- 1/2 cup sour cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1/2 cup crushed Ritz crackers
- 2 tbsp butter, melted
Instructions
1. Preheat oven to 375°F. Grease 9×13 dish.
2. Mix chicken, rice, broccoli, soups, milk, sour cream, onion, garlic, 1.5 cups cheese, seasonings.
3. Spread in dish, top with cheese and crackers, drizzle butter.
4. Bake covered 25 min, uncovered 10-15 min until golden.
5. Rest 5 min.
Notes
Use rotisserie chicken for ease. Fresh broccoli? Blanch first.
For keto, swap rice for cauliflower rice.
Reheat with milk splash. Freezes well unbaked.
