Description

Delicious Springtime Vegetable Quiche is a delightful dish celebrating fresh flavors and seasonal produce. Featuring a flaky crust filled with vibrant vegetables and creamy eggs, this quiche is perfect for any meal.

1 pre-made pie crust (9-inch, deep-dish), thawed if froze
2 tablespoons Olive Oil
1 small Yellow Onion, finely diced
2 cloves Garlic, minced
1 cup Fresh Spinach, roughly chopped
1 cup Asparagus, tough ends trimmed, cut into 1-inch pieces
1/2 cup Cherry Tomatoes, halved
4 large Eggs
1 1/2 cups Whole Milk
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Ground Nutmeg
1 cup Shredded Monterey Jack Cheese
1/2 cup Shredded Cheddar Cheese


Instructions

  1. Preheat your oven to 375°F (190°C). Unroll the thawed pie crust into a 9-inch deep-dish pie plate and crimp the edges decoratively
  2. Blind bake the crust for 10-15 minutes if desired, pricking the bottom with a fork before baking
  3. Heat olive oil in a large skillet over medium heat, add onions, and cook until softened (5-7 minutes). Stir in garlic and cook for 1 more minute
  4. Add asparagus to the skillet and cook for 3-4 minutes, then stir in spinach and cook until wilted (2-3 minutes). Remove from heat
  5. Scatter sautéed vegetables over the bottom of the prepared pie crust, then add halved cherry tomatoes
  6. Layer half of the Monterey Jack cheese and half of the cheddar cheese over the vegetables
  7. In a large bowl, whisk eggs, milk, salt, pepper, and nutmeg together until well combined
  8. Pour the egg mixture over the vegetables and cheese, then sprinkle the remaining cheeses on top
  9. Place the pie plate on a baking sheet and bake for 45-55 minutes or until the center is set and golden brow
  10. Cool on a wire rack for 10-15 minutes before slicing and serving

Notes

You can replace or add different vegetables based on what you have.

For a gluten-free version, use a gluten-free pie crust.
