Delicious Springtime Vegetable Quiche is a delightful dish celebrating fresh flavors and seasonal produce. Featuring a flaky crust filled with vibrant vegetables and creamy eggs, this quiche is perfect for any meal.
Ingredients
1 pre-made pie crust (9-inch, deep-dish), thawed if froze
2 tablespoons Olive Oil
1 small Yellow Onion, finely diced
2 cloves Garlic, minced
1 cup Fresh Spinach, roughly chopped
1 cup Asparagus, tough ends trimmed, cut into 1-inch pieces
1/2 cup Cherry Tomatoes, halved
4 large Eggs
1 1/2 cups Whole Milk
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Ground Nutmeg
1 cup Shredded Monterey Jack Cheese
1/2 cup Shredded Cheddar Cheese
Instructions
- Preheat your oven to 375°F (190°C). Unroll the thawed pie crust into a 9-inch deep-dish pie plate and crimp the edges decoratively
- Blind bake the crust for 10-15 minutes if desired, pricking the bottom with a fork before baking
- Heat olive oil in a large skillet over medium heat, add onions, and cook until softened (5-7 minutes). Stir in garlic and cook for 1 more minute
- Add asparagus to the skillet and cook for 3-4 minutes, then stir in spinach and cook until wilted (2-3 minutes). Remove from heat
- Scatter sautéed vegetables over the bottom of the prepared pie crust, then add halved cherry tomatoes
- Layer half of the Monterey Jack cheese and half of the cheddar cheese over the vegetables
- In a large bowl, whisk eggs, milk, salt, pepper, and nutmeg together until well combined
- Pour the egg mixture over the vegetables and cheese, then sprinkle the remaining cheeses on top
- Place the pie plate on a baking sheet and bake for 45-55 minutes or until the center is set and golden brow
- Cool on a wire rack for 10-15 minutes before slicing and serving
