Ingredients
2 ½ cups (300g) all-purpose flour
1 ½ cups (300g) granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon unsweetened cocoa powder
1 cup (240ml) buttermilk, at room temperature
½ cup (120ml) vegetable oil
2 large eggs, at room temperature
1 teaspoon white vinegar
1 teaspoon vanilla extract
2 tablespoons (30ml) red liquid food coloring
8 ounces (226g) cream cheese, softened
½ cup (113g) unsalted butter, softened
4 cups (480g) powdered sugar, sifted
1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder
- In a separate bowl, whisk together buttermilk, oil, eggs, vinegar, vanilla, and food coloring
- Add the wet ingredients to the dry ingredients and mix until just combined
- Divide the batter among muffin cups, filling each about two-thirds full
- Bake for 18-22 minutes or until a skewer comes out clea
- Let cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely
- For frosting, beat cream cheese and butter until smooth, then add powdered sugar gradually until fluffy
- Frost cooled cupcakes and garnish if desired
