Delicious Red Velvet Cupcakes with Cream Cheese Frosting


Ingredients

2 tablespoons (30ml) red liquid food coloring
8 ounces (226g) cream cheese, softened
½ cup (113g) unsalted butter, softened
4 cups (480g) powdered sugar, sifted
1 teaspoon vanilla extract
Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder
  3. In a separate bowl, whisk together buttermilk, oil, eggs, vinegar, vanilla, and food coloring
  4. Add the wet ingredients to the dry ingredients and mix until just combined
  5. Divide the batter among muffin cups, filling each about two-thirds full
  6. Bake for 18-22 minutes or until a skewer comes out clea
  7. Let cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely
  8. For frosting, beat cream cheese and butter until smooth, then add powdered sugar gradually until fluffy
  9. Frost cooled cupcakes and garnish if desired
