The recipe features toasted English muffins topped with sauce, cheese, scrambled eggs, and your favorite breakfast meats and vegetables.
Ingredients
4 English Muffins, split in half
1/2 cup Pizza or Marinara Sauce
1 1/2 cups Shredded Mozzarella Cheese
4 Large Eggs, Scrambled
4 slices or 2 links Cooked Beef Bacon or Turkey Sausage, crumbled or chopped
1/4 cup Bell Pepper, finely diced
1 teaspoon Dried Oregano
Instructions
- Preheat your oven to 400°F (200°C). Prepare all toppings: cook and crumble meat, scramble the eggs, and dice the vegetables
- Arrange the English muffin halves on a baking sheet, cut-side up. Toast them in the preheated oven for 3-5 minutes, or until they are lightly golde
- Remove the baking sheet from the oven. Spread a tablespoon of pizza sauce on each toasted muffin half
- Sprinkle a generous layer of mozzarella cheese over the sauce. Evenly distribute the scrambled eggs, cooked meat, and diced vegetables on top
- Add another light sprinkle of cheese and a dash of dried oregano
- Place the baking sheet back into the oven and bake for 8-10 minutes, or until the cheese is completely melted, bubbly, and slightly golde
- Let them cool for a minute before serving
Notes
Pre-toasting the English muffins is a crucial step to prevent a soggy base.
Feel free to substitute ingredients. Bagels or naan can be used for the base; pesto or white garlic sauce can replace marinara; and any cheese, pre-cooked protein, or vegetables will work.
For an extra crispy result, cook in an air fryer at 375°F (190°C) for about 5-7 minutes.
To get a golden, bubbly cheese topping, switch the oven to the broil setting for the last 30-60 seconds, watching carefully to prevent burning.
