Description

Cucumber Salad Sandwiches are a refreshing and lightweight dish perfect for summer, made with cucumbers mixed with a creamy dressing and served between soft slices of bread.


Ingredients

2 large English cucumbers
1/2 teaspoon salt
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon red onion, very finely minced
1 tablespoon fresh lemon juice
1/4 teaspoon black pepper
12 slices of soft white bread
Lettuce leaves (optional)


Instructions

  1. Prepare the cucumbers by washing thoroughly and grating or slicing them
  2. Salt and drain the cucumbers in a colander for 15-20 minutes
  3. Squeeze out excess liquid from the cucumbers
  4. Make the dressing by mixing mayonnaise, Greek yogurt, dill, chives, red onion, lemon juice, and black pepper in a bowl
  5. Combine the cucumbers with the dressing, folding gently
  6. Chill the mixture for at least 30 minutes for better flavor
  7. Prepare the bread, optionally spreading with butter or cream cheese
  8. Assemble the sandwiches by spreading cucumber salad on a slice of bread and topping with another slice
  9. Cut into desired shapes and serve immediately

Notes

For a vegan version, use vegan mayonnaise in place of regular mayonnaise.

Assemble sandwiches just before serving to prevent sogginess.
