Description
Cucumber Salad Sandwiches are a refreshing and lightweight dish perfect for summer, made with cucumbers mixed with a creamy dressing and served between soft slices of bread.
Ingredients
2 large English cucumbers
1/2 teaspoon salt
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon red onion, very finely minced
1 tablespoon fresh lemon juice
1/4 teaspoon black pepper
12 slices of soft white bread
Lettuce leaves (optional)
Instructions
- Prepare the cucumbers by washing thoroughly and grating or slicing them
- Salt and drain the cucumbers in a colander for 15-20 minutes
- Squeeze out excess liquid from the cucumbers
- Make the dressing by mixing mayonnaise, Greek yogurt, dill, chives, red onion, lemon juice, and black pepper in a bowl
- Combine the cucumbers with the dressing, folding gently
- Chill the mixture for at least 30 minutes for better flavor
- Prepare the bread, optionally spreading with butter or cream cheese
- Assemble the sandwiches by spreading cucumber salad on a slice of bread and topping with another slice
- Cut into desired shapes and serve immediately
Notes
For a vegan version, use vegan mayonnaise in place of regular mayonnaise.
Assemble sandwiches just before serving to prevent sogginess.
