Description

Crockpot Chicken Parmesan Soup is a rich, hearty, and comforting meal that simplifies the classic flavors of chicken parmesan into a creamy and delicious soup. Perfect for busy weeknights, this soup is loaded with tender chicken, tangy tomatoes, and melted cheese, all while being easy to prepare in a slow cooker.


Ingredients

2 pounds Boneless, Skinless Chicken Breasts
1 tablespoon Olive Oil
1 large Yellow Onion, diced
4 cloves Garlic, minced
1 (28-ounce) can Crushed Tomatoes
1 (15-ounce) can Tomato Sauce
4 cups Chicken Broth (low sodium)
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1/2 teaspoon Red Pepper Flakes (optional)
1/2 teaspoon Salt, or to taste
1/4 teaspoon Black Pepper, or to taste
1/2 cup Heavy Cream or Half-and-Half
1 cup Freshly Grated Parmesan Cheese, plus more for garnish
1 cup Shredded Mozzarella Cheese
1/4 cup Fresh Parsley, chopped, for garnish


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant
  2. Transfer the sautéed onion and garlic to your slow cooker. Place the chicken breasts evenly at the bottom of the slow cooker. Pour in the crushed tomatoes, tomato sauce, and chicken broth. Sprinkle in the dried oregano, dried basil, salt, and black pepper. Stir gently to combine
  3. Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Once done, remove chicken, shred, and return to the pot
  4. Stir in the heavy cream and gradually add parmesan and mozzarella cheese until melted. Adjust seasoning as necessary
  5. Serve hot, garnished with parsley and extra parmesan cheese

Notes

Sautéing the onions and garlic deepens the flavor.

Use quality crushed tomatoes for a better taste.
