Description

Crispy Louisiana Voodoo Fries are a flavorful and crunchy side dish with a vibrant, spicy seasoning inspired by Louisiana cuisine. This recipe transforms simple potatoes into a gourmet treat that is perfect for any occasion.


Ingredients

4 large Russet potatoes
8 cups Vegetable oil
1 teaspoon Fine sea salt
2 tablespoons Smoked paprika
1 tablespoon Garlic powder
1 tablespoon Onion powder
1.5 teaspoons Dried oregano
1.5 teaspoons Dried thyme
1 teaspoon Cayenne pepper
1 teaspoon Ground cumi
1 teaspoon Black pepper
1/2 teaspoon White pepper
1/2 teaspoon Chili powder
1/4 teaspoon Ground mustard
Fresh parsley, chopped (optional)
Lime wedges (optional)


Instructions

  1. Peel and cut potatoes into 1/4 to 1/3-inch thick sticks
  2. Rinse and soak the potato sticks in cold water for at least 30 minutes
  3. Dry the potato sticks thoroughly
  4. Mix all the Voodoo seasoning ingredients in a small bowl
  5. Heat the vegetable oil in a pot to 300°F (150°C)
  6. Set about a third of the dried potato sticks in the hot oil for 5-7 minutes until slightly cooked
  7. Remove and let them drain while sprinkling with salt
  8. Increase the oil temperature to 375°F (190°C)
  9. Fry the par-cooked potatoes for another 3-5 minutes until golden brown and crispy
  10. Remove and season with Voodoo seasoning immediately
  11. Garnish with parsley and lime if desired and serve hot

Notes

For baking, preheat oven to 425°F (220°C) and adjust oil and seasoning accordingly.
