Description

1.5 pounds Boneless Skinless Chicken Breasts, cut into 1-inch pieces
1 cup All-Purpose Flour
1/2 cup Cornstarch
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Smoked Paprika
1/2 teaspoon Black Pepper
1/4 teaspoon Cayenne Pepper (optional)
1 teaspoon Salt
1 cup Buttermilk
Vegetable Oil, for frying (about 4-6 cups)
1/2 cup Unsalted Butter
1 cup Frank’s RedHot Original Hot Sauce
1 tablespoon White Vinegar
1 teaspoon Garlic Powder (for sauce)
Blue Cheese Dressing or Ranch Dressing (optional)
Celery Sticks (optional)
Carrot Sticks (optional)


Instructions

  1. Pat chicken pieces dry with paper towels
  2. Soak chicken in buttermilk for at least 30 minutes
  3. In a separate dish, combine flour, cornstarch, garlic powder, onion powder, paprika, black pepper, cayenne (if using), and salt
  4. Coat chicken pieces in the dry mixture, shaking off excess
  5. Heat oil to 350-375°F (175-190°C)
  6. Fry chicken in batches for 5-7 minutes until golden brow
  7. Remove chicken and drain on a wire rack
  8. In a saucepan, melt butter and stir in hot sauce, vinegar, and garlic powder
  9. Toss fried chicken in the buffalo sauce and serve immediately

Double-dredging can enhance crispiness.

Ensure chicken is dry before soaking in buttermilk.
