Ingredients
1.5 pounds Boneless Skinless Chicken Breasts, cut into 1-inch pieces
1 cup All-Purpose Flour
1/2 cup Cornstarch
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Smoked Paprika
1/2 teaspoon Black Pepper
1/4 teaspoon Cayenne Pepper (optional)
1 teaspoon Salt
1 cup Buttermilk
Vegetable Oil, for frying (about 4-6 cups)
1/2 cup Unsalted Butter
1 cup Frank’s RedHot Original Hot Sauce
1 tablespoon White Vinegar
1 teaspoon Garlic Powder (for sauce)
Blue Cheese Dressing or Ranch Dressing (optional)
Celery Sticks (optional)
Carrot Sticks (optional)
Instructions
- Pat chicken pieces dry with paper towels
- Soak chicken in buttermilk for at least 30 minutes
- In a separate dish, combine flour, cornstarch, garlic powder, onion powder, paprika, black pepper, cayenne (if using), and salt
- Coat chicken pieces in the dry mixture, shaking off excess
- Heat oil to 350-375°F (175-190°C)
- Fry chicken in batches for 5-7 minutes until golden brow
- Remove chicken and drain on a wire rack
- In a saucepan, melt butter and stir in hot sauce, vinegar, and garlic powder
- Toss fried chicken in the buffalo sauce and serve immediately
