Ingredients
2 large yellow onions
Vegetable oil for deep frying (4-6 cups)
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 large egg
1 1/4 cups milk
1 1/2 cups all-purpose flour (for dry dredge)
1 teaspoon salt (for dry dredge)
1/2 teaspoon black pepper (for dry dredge)
1/2 teaspoon garlic powder (for dry dredge)
1/2 teaspoon onion powder (for dry dredge)
1/2 teaspoon smoked paprika (for dry dredge)
1 cup mayonnaise (for dipping sauce)
1/4 cup ketchup (for dipping sauce)
2 tablespoons prepared horseradish (for dipping sauce)
1 tablespoon white vinegar or lemon juice (for dipping sauce)

1/2 teaspoon cayenne pepper (for dipping sauce)
1/2 teaspoon garlic powder (for dipping sauce)

Instructions
- Prepare the onions by peeling and slicing them into 1/2-inch thick rounds, then separate the rings
- Make the dipping sauce by whisking together mayonnaise, ketchup, horseradish, vinegar, smoked paprika, cayenne, garlic powder, black pepper, and salt. Refrigerate
- Prepare the batter by whisking flour, cornstarch, baking powder, garlic powder, onion powder, smoked paprika, black pepper, and salt. In a separate bowl, whisk egg and milk, then combine with the dry ingredients
- For the dry dredge, mix together flour, salt, black pepper, garlic powder, onion powder, and smoked paprika in a shallow dish
- Set up your frying station with hot vegetable oil at 350-375°F
- Coat the onion pieces in dry dredge, then the wet batter, and return to dry dredge for coating agai
- Fry in small batches for 2-4 minutes until golden brown. Drain on paper towels and season with salt
- Serve immediately with the dipping sauce
