Ingredients
1 large eggplant (about 1.5 lbs), globe variety
1 cup panko breadcrumbs
½ cup all-purpose flour
2 large eggs, beate
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon dried oregano
¼ teaspoon black pepper
1 teaspoon salt, plus extra for salting the eggplant
2 tablespoons olive oil, or olive oil spray
Optional: fresh parsley for garnish
Instructions
- Prepare the Eggplant: Wash the eggplant and slice it into ¼-inch thick rounds. Salt the slices and let them sit for 20-30 minutes. Pat dry
- Set Up Breading Stations: Set up three shallow bowls with flour, beaten eggs, and a mixture of panko breadcrumbs and seasonings
- Bread the Eggplant: Dredge each slice in flour, dip in eggs, then coat with the panko mixture
- Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for 3-5 minutes
- Air Fry the Eggplant: Lightly spray the air fryer basket with olive oil. Place breaded eggplant slices in a single layer and spray the tops lightly with olive oil
- Cook to Perfection: Air fry for 8-10 minutes, flipping halfway through until golden and crispy
- Serve Immediately: Transfer to a serving platter, garnish with parsley, and serve hot
