Description

Crème Brûlée French Toast marries the indulgence of classic French toast with the sophisticated crackle of crème brûlée, delivering an impressive, restaurant-quality dish at home.

Ingredients

Scale

For the French Toast:

  • 1 loaf (about 1 pound) brioche bread, day-old preferred, cut into 1-inch thick slices (about 810 slices)
  • 6 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar, plus extra for caramelizing
  • 2 teaspoons vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, for cooking

For the Crème Brûlée Topping:

  • ½ cup granulated sugar, for caramelizing (divided per slice)

Instructions

  1. Prepare the Bread: Slice brioche bread into 1-inch thick pieces and arrange on a baking sheet
  2. Whisk the Custard: In a large dish, whisk together eggs, whole milk, heavy cream, ½ cup granulated sugar, vanilla, cinnamon, and salt until smooth
  3. Soak the Bread: Place brioche slices in the custard mixture, letting them soak for 2-3 minutes per side
  4. Cook the French Toast: Heat butter in a skillet and cook soaked bread slices for 3-4 minutes per side until golden brow
  5. Prepare for Brûlée: Once cooked, arrange French toast on a baking sheet and sprinkle sugar on top
  6. Caramelize the Sugar: Use a kitchen torch to caramelize sugar on each slice until golden and tip of sugar bubbles
  7. Serve Immediately: Enjoy the Crème Brûlée French Toast while warm, allowing the contrast of textures

Notes

For best results, serve immediately after caramelization to maintain the crispness of the sugar top.
