Creamy Tuscan Mushroom Pasta is a comforting, flavorful dish that blends tender pasta, earthy mushrooms, bright sun-dried tomatoes, and fresh spinach, all enveloped in a luxurious, creamy sauce.
Ingredients
1 pound (450g) short pasta (such as penne, rotini, or fettuccine)
2 tablespoons Olive Oil
1 large Yellow Onion, finely chopped
4 cloves Garlic, minced
16 ounces (approx. 450g) Cremini Mushrooms, sliced
1 teaspoon Dried Italian Seasoning
1/2 teaspoon Red Pepper Flakes
1/2 cup Sun-Dried Tomatoes, packed in oil, drained and chopped
4 cups Fresh Spinach
1 1/2 cups Vegetable Broth
1 1/2 cups Heavy Cream
1/2 cup Grated Parmesan Cheese, plus extra for serving
Salt and Freshly Ground Black Pepper, to taste
1/4 cup Fresh Parsley, chopped (for garnish, optional)
Instructions
- Cook the pasta according to package directions until al dente. Reserve 1 cup of cooking water before draining
- Heat Olive Oil in a large skillet over medium heat, add Yellow Onion and cook until softened. Add Garlic, Dried Italian Seasoning, and Red Pepper Flakes, cooking until fragrant
- Add Cremini Mushrooms, increase heat slightly, and cook until browned, about 7-10 minutes
- Stir in Sun-Dried Tomatoes and add Fresh Spinach in batches until wilted
- Pour in Vegetable Broth, bring to a simmer, and let cook for 2-3 minutes
- Reduce heat to low, stir in Heavy Cream and Grated Parmesan Cheese, season with Salt and Pepper to taste
- Combine cooked pasta with the sauce, adding reserved pasta water as needed to reach desired consistency
- Serve hot, garnished with Fresh Parsley and extra Parmesan, if desired
