Description

Creamy Tuscan Mushroom Pasta is a comforting, flavorful dish that blends tender pasta, earthy mushrooms, bright sun-dried tomatoes, and fresh spinach, all enveloped in a luxurious, creamy sauce.


Ingredients

1 pound (450g) short pasta (such as penne, rotini, or fettuccine)
2 tablespoons Olive Oil
1 large Yellow Onion, finely chopped
4 cloves Garlic, minced
16 ounces (approx. 450g) Cremini Mushrooms, sliced
1 teaspoon Dried Italian Seasoning
1/2 teaspoon Red Pepper Flakes
1/2 cup Sun-Dried Tomatoes, packed in oil, drained and chopped
4 cups Fresh Spinach
1 1/2 cups Vegetable Broth
1 1/2 cups Heavy Cream
1/2 cup Grated Parmesan Cheese, plus extra for serving
Salt and Freshly Ground Black Pepper, to taste
1/4 cup Fresh Parsley, chopped (for garnish, optional)


Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1 cup of cooking water before draining
  2. Heat Olive Oil in a large skillet over medium heat, add Yellow Onion and cook until softened. Add Garlic, Dried Italian Seasoning, and Red Pepper Flakes, cooking until fragrant
  3. Add Cremini Mushrooms, increase heat slightly, and cook until browned, about 7-10 minutes
  4. Stir in Sun-Dried Tomatoes and add Fresh Spinach in batches until wilted
  5. Pour in Vegetable Broth, bring to a simmer, and let cook for 2-3 minutes
  6. Reduce heat to low, stir in Heavy Cream and Grated Parmesan Cheese, season with Salt and Pepper to taste
  7. Combine cooked pasta with the sauce, adding reserved pasta water as needed to reach desired consistency
  8. Serve hot, garnished with Fresh Parsley and extra Parmesan, if desired
