1/2 cup Finely Chopped Yellow Onio
3 cloves Garlic, minced
1/2 teaspoon Red Pepper Flakes (optional)
1/2 cup Sun-Dried Tomatoes, packed in oil, drained and chopped
3 cups Chicken Broth
1 cup Orzo Pasta
1 cup Heavy Cream
4 cups Fresh Spinach
1/2 cup Grated Parmesan Cheese, plus more for serving
Fresh Basil or Parsley, chopped, for garnish (optional)


Instructions

  1. Pat chicken pieces dry; season with Italian seasoning, salt, and black pepper
  2. Heat olive oil in a skillet over medium-high heat; sear chicken until golden brown, then remove
  3. Reduce heat; sauté onion until translucent
  4. Add garlic and red pepper flakes; cook until fragrant
  5. Stir in sun-dried tomatoes, then add chicken broth; bring to a simmer
  6. Add orzo, cover, and simmer until al dente
  7. Stir in heavy cream; let heat through
  8. Return chicken and add spinach; stir until spinach wilts
  9. Mix in Parmesan cheese; season to taste
  10. Garnish with basil or parsley; serve immediately
