Ingredients
2 tablespoons Olive Oil
1.5 pounds Boneless Skinless Chicken Breast, cut into 1-inch pieces
1 teaspoon Italian Seasoning
1/2 teaspoon Salt, plus more to taste
1/4 teaspoon Black Pepper, plus more to taste
1/2 cup Finely Chopped Yellow Onio
3 cloves Garlic, minced
1/2 teaspoon Red Pepper Flakes (optional)
1/2 cup Sun-Dried Tomatoes, packed in oil, drained and chopped
3 cups Chicken Broth
1 cup Orzo Pasta
1 cup Heavy Cream
4 cups Fresh Spinach
1/2 cup Grated Parmesan Cheese, plus more for serving
Fresh Basil or Parsley, chopped, for garnish (optional)
Instructions
- Pat chicken pieces dry; season with Italian seasoning, salt, and black pepper
- Heat olive oil in a skillet over medium-high heat; sear chicken until golden brown, then remove
- Reduce heat; sauté onion until translucent
- Add garlic and red pepper flakes; cook until fragrant
- Stir in sun-dried tomatoes, then add chicken broth; bring to a simmer
- Add orzo, cover, and simmer until al dente
- Stir in heavy cream; let heat through
- Return chicken and add spinach; stir until spinach wilts
- Mix in Parmesan cheese; season to taste
- Garnish with basil or parsley; serve immediately
