1 cup Quick-Cooking Grits
3 cups Low-Sodium Chicken Broth
1 cup Milk
1/2 cup Heavy Cream
1/2 cup Shredded Sharp Cheddar Cheese
1/4 cup Shredded Monterey Jack Cheese
1/4 cup Unsalted Butter, divided
1 1/2 pounds Large Shrimp, peeled and deveined
1 tablespoon Olive Oil
1/2 cup Finely Diced Yellow Onio
1/2 cup Finely Diced Green Bell Pepper
2 cloves Garlic, minced
1 teaspoon Smoked Paprika
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Dried Thyme
Salt and Freshly Ground Black Pepper, to taste
2 tablespoons Fresh Parsley, chopped (for garnish)


Instructions

  1. In a medium saucepan, combine the chicken broth and milk. Bring to a gentle boil over medium-high heat. Slowly whisk in the quick-cooking grits, reduce the heat to low, cover and simmer for 5-7 minutes, stirring occasionally
  2. Once cooked, stir in 2 tablespoons of unsalted butter, cheddar cheese, and Monterey Jack cheese until melted. Stir in the heavy cream and season with salt and black pepper. Keep warm
  3. Pat the shrimp dry and in a large skillet, melt the remaining butter with olive oil over medium-high heat. Add onion and bell pepper, sauté for 3-4 minutes
  4. Add garlic, smoked paprika, cayenne pepper, and thyme. Cook for another minute. Add the shrimp and cook 2-3 minutes per side until pink and opaque. Season with salt and black pepper
  5. To serve, ladle grits into bowls and top with shrimp mixture. Garnish with parsley

Notes

For best results, use freshly grated cheese.

Cook shrimp carefully to avoid overcooking.
