Ingredients
1 cup Quick-Cooking Grits
3 cups Low-Sodium Chicken Broth
1 cup Milk
1/2 cup Heavy Cream
1/2 cup Shredded Sharp Cheddar Cheese
1/4 cup Shredded Monterey Jack Cheese
1/4 cup Unsalted Butter, divided
1 1/2 pounds Large Shrimp, peeled and deveined
1 tablespoon Olive Oil
1/2 cup Finely Diced Yellow Onio
1/2 cup Finely Diced Green Bell Pepper
2 cloves Garlic, minced
1 teaspoon Smoked Paprika
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Dried Thyme
Salt and Freshly Ground Black Pepper, to taste
2 tablespoons Fresh Parsley, chopped (for garnish)
Instructions
- In a medium saucepan, combine the chicken broth and milk. Bring to a gentle boil over medium-high heat. Slowly whisk in the quick-cooking grits, reduce the heat to low, cover and simmer for 5-7 minutes, stirring occasionally
- Once cooked, stir in 2 tablespoons of unsalted butter, cheddar cheese, and Monterey Jack cheese until melted. Stir in the heavy cream and season with salt and black pepper. Keep warm
- Pat the shrimp dry and in a large skillet, melt the remaining butter with olive oil over medium-high heat. Add onion and bell pepper, sauté for 3-4 minutes
- Add garlic, smoked paprika, cayenne pepper, and thyme. Cook for another minute. Add the shrimp and cook 2-3 minutes per side until pink and opaque. Season with salt and black pepper
- To serve, ladle grits into bowls and top with shrimp mixture. Garnish with parsley
