Creamy One Pot Cajun Chicken Linguine is a comforting and flavorful dish that combines succulent chicken, al dente linguine, and a rich, spicy Cajun cream sauce, all cooked in one pot for convenience.
Ingredients
1 tablespoon Olive Oil
1.5 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch pieces
2 tablespoons Cajun Seasoning
1 medium Yellow Onion, finely chopped
2 cloves Garlic, minced
1 Red Bell Pepper, deseeded and diced
1 Green Bell Pepper, deseeded and diced
4 cups Chicken Broth
1 cup Milk
12 ounces Linguine, uncooked
1/2 cup Heavy Cream
1/2 cup Grated Parmesan Cheese
1/4 cup Fresh Parsley, chopped, for garnish
Salt and Black Pepper to taste
Instructions
- Cut the boneless, skinless chicken breasts into 1-inch pieces and season with Cajun seasoning
- In a large pot, heat olive oil and brown the chicken for 4-5 minutes, then set aside
- Sauté chopped onion, garlic, red and green bell peppers until soft
- Stir in the remaining Cajun seasoning, then add chicken broth and milk, bringing to a simmer
- Add linguine, ensuring it's mostly submerged, and cook for 10-12 minutes until al dente
- Stir in heavy cream and chicken, cook for an additional 2-3 minutes
- Mix in grated Parmesan cheese, season, and serve garnished with parsley

Adjust Cajun seasoning for desired spice level.
