1 medium Yellow Onion, finely diced
4 cloves Garlic, minced
1 teaspoon Dried Oregano
1/2 teaspoon Dried Thyme
1/4 teaspoon Red Pepper Flakes (optional)
2 cans (15 ounces each) Cannellini Beans, rinsed and drained
3 cups Vegetable Broth
1/2 cup Heavy Cream
1/4 cup Finely Grated Pecorino Romano or Parmesan Cheese (optional)
2 cups Fresh Spinach, roughly chopped
1 tablespoon Fresh Lemon Juice
Salt, to taste
Freshly Ground Black Pepper, to taste
Fresh Parsley or Chives, chopped, for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until softened
  2. Stir in the minced garlic, oregano, thyme, and red pepper flakes. Cook until garlic is fragrant
  3. Add the rinsed cannellini beans and vegetable broth, stirring well. Bring to a gentle simmer
  4. Cover and simmer for 10-15 minutes, allowing the flavors to meld
  5. If a creamier texture is desired, mash some of the beans or use an immersion blender
  6. Stir in the heavy cream and cheese (if using) until well combined
  7. Add the chopped spinach and stir until wilted
  8. Remove from heat and stir in lemon juice. Season with salt and pepper to taste
  9. Serve garnished with fresh herbs

Notes

For a vegan version, substitute heavy cream with coconut milk and omit the cheese.
