Ingredients
- 2 tbsp olive oil
- 1 lb chicken breast, cubed
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups spinach
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp butter
Instructions
1. Sear chicken in olive oil and season with salt and pepper.
2. Remove chicken and sauté garlic and tomatoes.
3. Add broth and chicken; simmer 10–15 minutes.
4. Stir in cream, Parmesan, and butter; simmer gently.
5. Add spinach and let wilt. Adjust seasoning and serve warm.
Notes
Add pasta or rice for a heartier soup.
Use rotisserie chicken for a shortcut.
Avoid boiling after adding cream to keep texture smooth.
