Ingredients

1 large English cucumber
2 cups (500g) full-fat plain Greek yogurt
23 cloves Garlic
2 tablespoons Extra virgin olive oil
2 tablespoons Fresh dill
1 tablespoon Fresh lemon juice
½ teaspoon Sea salt
¼ teaspoon Black pepper


Instructions

  1. Grate the English cucumber and squeeze out excess water using a clean kitchen towel or cheesecloth
  2. In a medium mixing bowl, combine the strained cucumber with Greek yogurt, minced garlic, olive oil, dill, lemon juice, salt, and pepper
  3. Fold the ingredients together until well combined. Taste and adjust seasoning as needed
  4. Cover with plastic wrap and refrigerate for at least 30 minutes before serving
