Ingredients
1 (15-ounce) can Chickpeas, drained and rinsed
1/2 teaspoon Baking soda (optional)
1/2 cup Tahini, well stirred
1/4 cup Fresh lemon juice (from 1–2 lemons)
2 cloves Garlic, peeled
1/4 cup Cold water, plus more as needed
1/2 teaspoon Fine sea salt, or to taste
1/4 teaspoon Ground cumi
2 tablespoons Extra virgin olive oil, plus more for serving
Pinch of paprika or sumac, for garnish (optional)
Fresh parsley, chopped, for garnish (optional)
Instructions
- Prepare the chickpeas by draining and rinsing them thoroughly. Optionally, remove the skins for a smoother texture
- In a food processor, combine the garlic, lemon juice, and salt. Process until the garlic is finely minced
- Add tahini and ground cumin to the mixture and process until it becomes pale and thick
- Incorporate the chickpeas and process until the mixture is thick and crumbly
- With the processor running, drizzle in cold water until the hummus reaches a silky-smooth consistency
- Taste and adjust the seasonings as needed
- Transfer to a serving bowl, drizzle with olive oil, and garnish as desired
Notes
Let the hummus rest in the refrigerator for 30 minutes to allow flavors to meld for an even better taste.
Use high-quality tahini for the best flavor.
