Creamy Chicken Fajita Casserole is a hearty and comforting dish that combines the vibrant flavors of fajitas with a creamy sauce, perfect for family dinners or gatherings.
Ingredients
2 tablespoons Olive Oil
1.5 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
2 tablespoons Fajita Seasoning, divided
1 large Red Bell Pepper, thinly sliced
1 large Green Bell Pepper, thinly sliced
1 large Yellow Bell Pepper, thinly sliced
1 large White Onion, thinly sliced
3 cloves Garlic, minced
1 (10.5 ounce) can Cream of Chicken Soup
1 cup Whole Milk
1 (4 ounce) can Diced Green Chilies, undrained
1 teaspoon Ground Cumi
1/2 teaspoon Smoked Paprika
1/4 teaspoon Cayenne Pepper (optional)
Salt and Freshly Ground Black Pepper to taste
2 cups Shredded Monterey Jack Cheese, divided
1 cup Shredded Cheddar Cheese, divided
Fresh Cilantro, chopped, for garnish
Optional toppings: Sour Cream, Sliced Jalapeños, Avocado Slices
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish
- Heat olive oil in a large skillet over medium-high heat, add chicken and sprinkle with 1 tablespoon of fajita seasoning. Cook until browned and cooked through
- In the same skillet, sauté bell peppers and onion until soft, then add minced garlic and cook for an additional minute
- Stir in cream of chicken soup, milk, diced green chilies, ground cumin, smoked paprika, and optional cayenne pepper. Mix until smooth and season with salt and pepper
- Add cooked chicken to the skillet and stir to coat everything in the creamy sauce
- Pour half of the mixture into the baking dish, layer with 1 cup Monterey Jack and 1/2 cup cheddar cheese, then top with remaining chicken mixture
- Sprinkle remaining cheese on top and bake for 25-30 minutes until bubbly and golde
- Let the casserole rest for 5-10 minutes before serving, garnished with cilantro and optional toppings
Notes
For a quicker meal, use pre-cooked rotisserie chicken.
Adjust spice level to preference by adding more or less cayenne.
