Description

Creamy Chicken Fajita Casserole is a hearty and comforting dish that combines the vibrant flavors of fajitas with a creamy sauce, perfect for family dinners or gatherings.

2 tablespoons Olive Oil
1.5 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
2 tablespoons Fajita Seasoning, divided
1 large Red Bell Pepper, thinly sliced
1 large Green Bell Pepper, thinly sliced
1 large Yellow Bell Pepper, thinly sliced
1 large White Onion, thinly sliced
3 cloves Garlic, minced
1 (10.5 ounce) can Cream of Chicken Soup
1 cup Whole Milk
1 (4 ounce) can Diced Green Chilies, undrained
1 teaspoon Ground Cumi
1/2 teaspoon Smoked Paprika
1/4 teaspoon Cayenne Pepper (optional)
Salt and Freshly Ground Black Pepper to taste
2 cups Shredded Monterey Jack Cheese, divided
1 cup Shredded Cheddar Cheese, divided
Fresh Cilantro, chopped, for garnish
Optional toppings: Sour Cream, Sliced Jalapeños, Avocado Slices


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish
  2. Heat olive oil in a large skillet over medium-high heat, add chicken and sprinkle with 1 tablespoon of fajita seasoning. Cook until browned and cooked through
  3. In the same skillet, sauté bell peppers and onion until soft, then add minced garlic and cook for an additional minute
  4. Stir in cream of chicken soup, milk, diced green chilies, ground cumin, smoked paprika, and optional cayenne pepper. Mix until smooth and season with salt and pepper
  5. Add cooked chicken to the skillet and stir to coat everything in the creamy sauce
  6. Pour half of the mixture into the baking dish, layer with 1 cup Monterey Jack and 1/2 cup cheddar cheese, then top with remaining chicken mixture
  7. Sprinkle remaining cheese on top and bake for 25-30 minutes until bubbly and golde
  8. Let the casserole rest for 5-10 minutes before serving, garnished with cilantro and optional toppings

Notes

For a quicker meal, use pre-cooked rotisserie chicken.

Adjust spice level to preference by adding more or less cayenne.
