Description

  • 4 bagels (plain, everything, or cheddar), split
  • 8 slices bacon, cooked crispy
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp green onions, finely chopped
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • Optional add-ins: sliced tomato, avocado, fried egg, hot sauce

Instructions

1. Cook bacon until crisp (oven: 400°F/205°C for 15–20 minutes on a rack, or skillet). Drain on paper towels.

2. Make spread: In a bowl, mix softened cream cheese, mayonnaise, Dijon, green onions, garlic powder, and black pepper until smooth.

3. Toast bagels lightly to prevent sogginess.

4. Assemble: Spread the creamy mixture over each toasted bagel half. Top with bacon (break to fit) and sprinkle generously with shredded cheddar.

5. Broil on a sheet pan, rack in the upper third, 2–3 minutes until cheese is melted, bubbly, and lightly golden.

6. Finish & serve hot. Add optional tomato/avocado or a fried egg. Garnish with extra green onions or a pinch of smoked paprika.

Notes

Make-ahead: Assemble (without fresh tomato/avocado), wrap, and refrigerate up to 24 hours; broil before serving.

Freezer meal prep: Assemble, wrap each half tightly, freeze up to 2 months. Reheat at 350°F/175°C for 10–12 minutes or air fry at 360°F/182°C for 5–6 minutes.

Lighter swaps: Use turkey bacon, reduced-fat cream cheese, or bagel thins.
