Ingredients
1.5 pounds Boneless, Skinless Chicken Thighs
1 tablespoon Olive Oil
½ teaspoon Salt
¼ teaspoon Black Pepper
1 tablespoon Olive Oil
2 cloves Garlic, minced
1 teaspoon Fresh Ginger, grated
1 cup Fresh or Frozen Cranberries
¾ cup Fresh Orange Juice
2 tablespoons Orange Zest
¼ cup Honey or Maple Syrup
2 tablespoons Soy Sauce or Tamari
1 tablespoon Apple Cider Vinegar
1 teaspoon Cornstarch
2 tablespoons Cold Water
Fresh Chopped Parsley (optional)
Extra Orange Zest (optional)

Instructions
- Prepare the Chicken: Pat the chicken thighs dry. Season with salt and black pepper
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes on each side
- Start the Glaze: Reduce heat; add more olive oil, garlic, and ginger. Sauté until fragrant
- Add Glaze Ingredients: Stir in cranberries, orange juice, zest, honey, soy sauce, and vinegar. Simmer
- Simmer the Glaze: Cook until cranberries soften, about 8-10 minutes
- Thicken the Glaze: Combine cornstarch with cold water, then add to glaze, stirring until thickened
- Combine Chicken and Glaze: Return chicken to skillet, coat with glaze
- Finish Cooking: Simmer or bake until chicken is cooked through, at 165°F
- Rest and Garnish: Let chicken rest for 5 minutes, then garnish and serve
