Description

Cozy Ground Turkey Zucchini Casserole is a heartwarming dish that combines lean ground turkey and fresh zucchini, creating a healthy meal packed with flavor. Perfect for weeknights, it's easy to prepare and adaptable to different tastes.


Ingredients

1 tablespoon Olive oil
1.5 pounds Lean ground turkey (93/7 or 90/10)
1 large Yellow onion, diced
2 cloves Garlic, minced
2 medium Zucchini, thinly sliced (about 4 cups)
1 (14.5 ounce) can Diced tomatoes, undrained
1 (8 ounce) can Tomato sauce
1 teaspoon Dried oregano
1/2 teaspoon Dried basil
1/4 teaspoon Red pepper flakes (optional, for a little kick)
Salt to taste
Black pepper to taste
1 cup Shredded mozzarella cheese
1/2 cup Grated parmesan cheese, divided
1/4 cup Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
  2. Heat olive oil in a large skillet over medium heat. Add diced yellow onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute
  3. Add lean ground turkey, breaking it apart with a spoon. Cook until fully browned and no pink remains. Drain excess fat if necessary
  4. Stir in diced tomatoes, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and black pepper. Simmer for 10-15 minutes
  5. Slice zucchini thinly and pat dry with paper towels to remove excess moisture
  6. Spread half of the ground turkey mixture in the bottom of the baking dish. Layer half of the zucchini, half of the mozzarella cheese, and a quarter of the parmesan cheese. Repeat with remaining turkey, zucchini, mozzarella, and parmesa
  7. Bake for 25-30 minutes, or until bubbly and cheese is golden brow
  8. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh chopped parsley

Notes

To prevent a watery casserole, draw out moisture from the zucchini by sprinkling it with salt and letting it sit before patting dry.
