Ingredients
1 tablespoon Olive oil
1.5 pounds Lean ground turkey (93/7 or 90/10)
1 large Yellow onion, diced
2 cloves Garlic, minced
2 medium Zucchini, thinly sliced (about 4 cups)
1 (14.5 ounce) can Diced tomatoes, undrained
1 (8 ounce) can Tomato sauce
1 teaspoon Dried oregano
1/2 teaspoon Dried basil
1/4 teaspoon Red pepper flakes (optional, for a little kick)
Salt to taste
Black pepper to taste
1 cup Shredded mozzarella cheese
1/2 cup Grated parmesan cheese, divided
1/4 cup Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
- Heat olive oil in a large skillet over medium heat. Add diced yellow onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute
- Add lean ground turkey, breaking it apart with a spoon. Cook until fully browned and no pink remains. Drain excess fat if necessary
- Stir in diced tomatoes, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and black pepper. Simmer for 10-15 minutes
- Slice zucchini thinly and pat dry with paper towels to remove excess moisture
- Spread half of the ground turkey mixture in the bottom of the baking dish. Layer half of the zucchini, half of the mozzarella cheese, and a quarter of the parmesan cheese. Repeat with remaining turkey, zucchini, mozzarella, and parmesa
- Bake for 25-30 minutes, or until bubbly and cheese is golden brow
- Let the casserole rest for 5-10 minutes before serving. Garnish with fresh chopped parsley
Notes
To prevent a watery casserole, draw out moisture from the zucchini by sprinkling it with salt and letting it sit before patting dry.
