- 2 tablespoons unsalted butter
- 8 ounces beef bacon, diced
- 1 large yellow onion, finely chopped
- 4 cloves garlic, minced
- 2 pounds cremini mushrooms (baby bellas), wiped clean and quartered
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional, for a little kick)
- 1/2 cup vegetable or beef broth
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar (packed)
- 1/2 teaspoon black pepper, freshly ground
- 1/2 cup fresh parsley, chopped, for garnish
- 1/2 cup shredded sharp cheddar cheese (optional, for serving)
Instructions
- Heat the olive oil in a large skillet over medium heat. Cook the beef bacon until crispy, about 8-10 minutes, then remove and set aside
- Add butter to the skillet with reserved bacon fat. Cook the chopped onions until translucent, about 5-7 minutes. Add minced garlic and cook until fragrant
- Increase heat to medium-high and add quartered mushrooms. Cook until mushrooms release liquid and begin to brown, about 10-15 minutes
- Add smoked paprika, dried thyme, and cayenne pepper. Cook for another 1-2 minutes
- Pour in broth, soy sauce, apple cider vinegar, brown sugar, and black pepper. Stir and bring to a gentle simmer
- Reduce heat to medium-low, cover and simmer for 10-15 minutes
- Uncover, stir in crispy beef bacon, and garnish with parsley. Serve hot
