Description

These Cowboy Mushrooms are a robust and earthy side dish, enriched with the flavors of beef bacon, sweet onions, and savory spices. They evoke warm memories and are perfect for gatherings or cozy family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces beef bacon, diced
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 pounds cremini mushrooms (baby bellas), wiped clean and quartered
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional, for a little kick)
  • 1/2 cup vegetable or beef broth
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar (packed)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 cup fresh parsley, chopped, for garnish
  • 1/2 cup shredded sharp cheddar cheese (optional, for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Cook the beef bacon until crispy, about 8-10 minutes, then remove and set aside
  2. Add butter to the skillet with reserved bacon fat. Cook the chopped onions until translucent, about 5-7 minutes. Add minced garlic and cook until fragrant
  3. Increase heat to medium-high and add quartered mushrooms. Cook until mushrooms release liquid and begin to brown, about 10-15 minutes
  4. Add smoked paprika, dried thyme, and cayenne pepper. Cook for another 1-2 minutes
  5. Pour in broth, soy sauce, apple cider vinegar, brown sugar, and black pepper. Stir and bring to a gentle simmer
  6. Reduce heat to medium-low, cover and simmer for 10-15 minutes
  7. Uncover, stir in crispy beef bacon, and garnish with parsley. Serve hot

Notes

Fresh ingredients greatly enhance flavor.

Don’t crowd the skillet when browning mushrooms.

Adjust spiciness by modifying cayenne pepper.
