Description

Cowboy BBQ Bacon Cheddar Chicken is a memory, a celebration, and a taste of home with a gourmet twist. Each bite of this dish is a symphony of smoky, savory, and cheesy goodness, making it a guaranteed family favorite. Tender chicken breasts slathered in rich BBQ sauce are topped with crispy beef bacon and melted sharp cheddar.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds total)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 cup your favorite BBQ sauce (homemade or store-bought)
  • 6 strips beef bacon, cooked crispy and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture evenly over both sides of each chicken breast
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes per side until golden brow
  3. Transfer the skillet to the preheated oven. Bake for 10-15 minutes, until the chicken is almost cooked through
  4. Remove the skillet from the oven. Spoon BBQ sauce over each chicken breast, top with crumbled bacon and shredded cheese
  5. Return to oven and bake for another 5-10 minutes until the cheese is melted and bubbly, and chicken reaches 165°F (74°C)
  6. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired

Notes

Ensure chicken is patted dry for a good sear.

Use an oven-safe skillet to minimize dishes.
