Ingredients
1 cup (225g) full-fat cottage cheese
2 large eggs, separated
1 tablespoon maple syrup or honey
1 teaspoon vanilla extract
1/2 cup fresh blueberries
1 tablespoon cornstarch or arrowroot powder
1/4 teaspoon cream of tartar (optional)
Pinch of salt
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper
- Separate egg whites from yolks, placing whites in a clean bowl
- Mix egg yolks with cottage cheese, maple syrup, and vanilla extract until smooth
- Whip egg whites with salt and cream of tartar until stiff peaks form
- Gently fold egg whites into the cottage cheese mixture in thirds
- Toss blueberries with cornstarch and gently fold into the batter
- Spoon mixture onto the baking sheet to form rounds, leaving space between them
- Bake for 25-30 minutes until golden brown and firm to the touch
- Let cool for a few minutes, then transfer to a wire rack to cool completely
