Description

Cottage Cheese Blueberry Cloud Bread is a fluffy, subtly sweet treat packed with protein and bursting with juicy blueberries. Perfect for breakfast or as a delightful snack.


Ingredients

1 cup (225g) full-fat cottage cheese
2 large eggs, separated
1 tablespoon maple syrup or honey
1 teaspoon vanilla extract
1/2 cup fresh blueberries
1 tablespoon cornstarch or arrowroot powder
1/4 teaspoon cream of tartar (optional)
Pinch of salt


Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper
  2. Separate egg whites from yolks, placing whites in a clean bowl
  3. Mix egg yolks with cottage cheese, maple syrup, and vanilla extract until smooth
  4. Whip egg whites with salt and cream of tartar until stiff peaks form
  5. Gently fold egg whites into the cottage cheese mixture in thirds
  6. Toss blueberries with cornstarch and gently fold into the batter
  7. Spoon mixture onto the baking sheet to form rounds, leaving space between them
  8. Bake for 25-30 minutes until golden brown and firm to the touch
  9. Let cool for a few minutes, then transfer to a wire rack to cool completely
