Ingredients
2 cups (450g) Cottage Cheese
3 Large Eggs
1/4 cup (60ml) Granulated Sugar
1 teaspoon Vanilla Extract
1/4 cup (30g) All-Purpose Flour
1/2 teaspoon Lemon Zest
1/4 teaspoon Salt
1 ½ cups (225g) Fresh Blueberries
Butter or Cooking Spray for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch (20×20 cm) baking dish with butter or cooking spray
- In a large bowl, whisk together cottage cheese, eggs, sugar, vanilla extract, lemon zest, and salt until combined
- Sprinkle the all-purpose flour over the mixture and mix gently until just combined
- Fold in the fresh blueberries carefully to maintain their shape
- Pour the mixture into the prepared dish and spread evenly, then bake for 40-50 minutes until golden and set
- Allow the bake to cool for 15-20 minutes before slicing and serving
Notes
For a gluten-free version, use almond flour or a gluten-free flour blend.
Frozen blueberries can be used without thawing.
