Description

Cottage Cheese Blueberry Bake is a wholesome dish that combines the creamy goodness of cottage cheese with fresh blueberries, making it perfect for breakfast, brunch, or a light dessert.

3 Large Eggs
1/4 cup (60ml) Granulated Sugar
1 teaspoon Vanilla Extract
1/4 cup (30g) All-Purpose Flour
1/2 teaspoon Lemon Zest
1/4 teaspoon Salt
1 ½ cups (225g) Fresh Blueberries
Butter or Cooking Spray for greasing


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch (20×20 cm) baking dish with butter or cooking spray
  2. In a large bowl, whisk together cottage cheese, eggs, sugar, vanilla extract, lemon zest, and salt until combined
  3. Sprinkle the all-purpose flour over the mixture and mix gently until just combined
  4. Fold in the fresh blueberries carefully to maintain their shape
  5. Pour the mixture into the prepared dish and spread evenly, then bake for 40-50 minutes until golden and set
  6. Allow the bake to cool for 15-20 minutes before slicing and serving

Notes

Frozen blueberries can be used without thawing.
