Ingredients
1 cup cottage cheese
1 1/2 cups all-purpose flour (or gluten-free/keto alternative)
1 egg
1 tsp baking powder
1/2 tsp salt
Optional: honey, garlic powder, shredded cheese, herbs
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a bowl, mix cottage cheese, egg, and seasonings.
3. Fold in flour and baking powder until a soft dough forms.
4. Divide and shape into bagels by hand or using a cutter.
5. Top with seeds, herbs, or cheese if desired.
6. Bake for 20–25 minutes until golden brown.
7. Cool slightly before serving or freezing.
Notes
Use almond and coconut flour for keto.
Use gluten-free blend and xanthan gum for GF version.
Wrap and freeze for up to 3 months.
