This Chicken Sausage Lasagna isn't just another pasta dish; it's a culinary hug in a casserole dish. It's straightforward yet incredibly flavorful, incorporating savory chicken sausage, a creamy cheese blend, and a rich tomato sauce simmered with herbs.

1 tablespoon Olive Oil
1 large Yellow Onion, chopped
3 cloves Garlic, minced
1.5 pounds Lean Ground Chicken Sausage, casings removed if applicable
28 ounces Crushed Tomatoes
15 ounces Tomato Sauce
6 ounces Tomato Paste
1 cup Chicken Broth
2 tablespoons Fresh Parsley, chopped, plus more for garnish
1 tablespoon Dried Oregano
1 teaspoon Dried Basil
1/2 teaspoon Red Pepper Flakes (optional)
1 teaspoon Sugar
Salt and Freshly Ground Black Pepper to taste
1215 Lasagna Noodles, oven-ready or traditional
15 ounces Ricotta Cheese
1 large Egg
1/2 cup Grated Parmesan Cheese, plus more for topping
1/4 cup Fresh Parsley, chopped
Pinch of Nutmeg
4 cups Shredded Mozzarella Cheese, divided


Instructions

  1. Heat olive oil in a large pot over medium heat, add onion and cook until softened
  2. Add garlic and cook for another minute, then add chicken sausage and brow
  3. Stir in crushed tomatoes, tomato sauce, tomato paste, and broth. Season and simmer for 30-60 minutes
  4. Prepare the ricotta mixture in a bowl: mix ricotta, egg, Parmesan, parsley, and nutmeg
  5. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish
  6. Spread a layer of meat sauce on the bottom of the dish
  7. Layer noodles over sauce, spread half of the ricotta mixture over noodles
  8. Sprinkle mozzarella over ricotta, then ladle meat sauce on top
  9. Repeat the layering process: noodles, ricotta, mozzarella, meat sauce
  10. Add a final layer of noodles, top with remaining meat sauce and mozzarella
  11. Cover with foil and bake for 25 minutes, then uncover and bake for another 20-25 minutes
  12. Let rest for 15-20 minutes before serving
