These Chicken Cordon Bleu Quesadillas combine tender chicken, smoky ham, and Swiss cheese in crispy golden tortillas with a creamy Dijon sauce — ready in 25 minutes for an easy, comforting dinner.
Ingredients
- 2 cups cooked shredded chicken (rotisserie works)
- 4 large flour tortillas
- 4 slices deli ham, thinly sliced
- 1 cup shredded Swiss cheese (or Gruyere)
- 2 tablespoons Dijon mustard
- 2 tablespoons mayonnaise
- 1 teaspoon honey (optional)
- 1 tablespoon butter, for grilling
- Salt and black pepper to taste
- Optional garnish: chopped parsley or green onions
Instructions
1. In a small bowl, whisk together Dijon mustard, mayonnaise, and honey to make the sauce.
2. Lay out tortillas and spread the sauce evenly on one side of each.
3. Layer shredded chicken, ham, and Swiss cheese on top of two tortillas.
4. Cover with the remaining tortillas, sauce side down.
5. Heat butter in a nonstick skillet over medium heat.
6. Cook each quesadilla for 2–3 minutes per side until golden and crisp.
7. Remove from skillet, rest briefly, and cut into quarters.
8. Serve warm with extra Dijon or honey mustard for dipping.
Notes
Use freshly grated cheese for better melting and texture.
Do not overfill quesadillas to keep them crisp and easy to flip.
Reheat leftovers in a skillet or oven to maintain crunch.
For extra richness, mix a spoonful of cream cheese into the Dijon sauce.
You can freeze cooked quesadillas for up to 2 months and reheat as needed.
