Ingredients
8 oz whole-wheat pasta
2 cups grilled chicken breast, sliced
1 cup halal croutons
½ cup shredded Parmesan (or vegetarian Parmesan)
1 large lemon, juiced
¼ cup olive oil
1 tbsp Dijon mustard
1 tsp salt
½ tsp freshly ground black pepper
Fresh gremolata (¼ cup parsley, ½ tsp lemon zest, 1 clove minced garlic)
1 tbsp lemon zest (optional finish)
Instructions
Boil pasta 2 minutes less than package instructions, drain, and cool.
Season chicken with salt and grill 4-5 minutes per side until tender.
Whisk olive oil, lemon juice, Dijon, salt, and pepper for dressing.
Toss hot pasta with half the dressing until coated.
Mix in chicken, croutons, and gremolata; chill 15 minutes before serving.
Notes
Chill salad to enhance flavors.
Use avocado oil for a subtler fat.
Add spinach for extra greens.
Let cooked pasta cool before tossing to avoid sogginess.
