Description

4 cups Fresh or frozen pitted cherries
1/2 cup Granulated sugar (adjust based on cherry sweetness)
2 tablespoons Cornstarch
1 tablespoon Fresh lemon juice
1/2 teaspoon Almond extract (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking pan with parchment paper
  2. In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs
  3. Press two-thirds of the mixture into the bottom of the pan to form the crust
  4. In a separate bowl, combine the cherries, sugar, cornstarch, lemon juice, and almond extract. Toss until cherries are coated
  5. Spread the cherry filling evenly over the crust, then sprinkle the remaining crumble mixture on top
  6. Bake for 45-55 minutes, until golden brown and bubbly
  7. Allow to cool completely before cutting into squares

Letting the bars cool completely is crucial to ensure they hold their shape.

For extra flavor, consider adding a pinch of cinnamon or swapping out almond extract for vanilla.
