Ingredients
2 cups All-purpose flour
1 cup Granulated sugar
1 teaspoon Baking powder
1/2 teaspoon Salt
1 cup Unsalted butter, very cold and cut into small cubes
1 cup Old-fashioned rolled oats
4 cups Fresh or frozen pitted cherries
1/2 cup Granulated sugar (adjust based on cherry sweetness)
2 tablespoons Cornstarch
1 tablespoon Fresh lemon juice
1/2 teaspoon Almond extract (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking pan with parchment paper
- In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs
- Press two-thirds of the mixture into the bottom of the pan to form the crust
- In a separate bowl, combine the cherries, sugar, cornstarch, lemon juice, and almond extract. Toss until cherries are coated
- Spread the cherry filling evenly over the crust, then sprinkle the remaining crumble mixture on top
- Bake for 45-55 minutes, until golden brown and bubbly
- Allow to cool completely before cutting into squares

Letting the bars cool completely is crucial to ensure they hold their shape.
For extra flavor, consider adding a pinch of cinnamon or swapping out almond extract for vanilla.
