Ingredients
4 medium-sized Russet potatoes
1 tablespoon olive oil for potatoes
1 teaspoon salt for potatoes
½ teaspoon black pepper for potatoes
1 tablespoon olive oil for meat
1 pound lean ground beef
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning mix
½ cup water
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese

Instructions
