Ingredients
- 1 ½ lbs baby potatoes, quartered
- 14 oz smoked sausage, sliced
- 2 tbsp olive oil
- 1 packet ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 green onions, chopped
- Fresh parsley, chopped (optional)
- Salt & black pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C). Grease a large baking dish.
2. Toss potatoes with olive oil, ranch seasoning, salt, and pepper.
3. Spread potatoes in dish and bake 25 minutes.
4. Stir in sausage slices; bake 15 more minutes.
5. Top with cheddar and mozzarella; bake 5-7 minutes until bubbly.
6. Garnish with green onions and parsley.
