1 teaspoon Dried Oregano
1 teaspoon Dried Thyme

3 pounds Russet Potatoes, peeled and cut into 1-inch chunks
½ cup Milk, whole or 2%, warmed
¼ cup Unsalted Butter, melted
½ teaspoon Salt
¼ teaspoon Black Pepper
2 cups Shredded Sharp Cheddar Cheese
1 cup Shredded Mozzarella Cheese


Instructions

  1. Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, diced onion, minced garlic, beaten egg, breadcrumbs, milk, ketchup, Worcestershire sauce, dried oregano, dried thyme, salt, and black pepper
  2. Form and Initial Bake: Lightly grease a 9×13-inch baking dish. Press the meatloaf mixture evenly into the prepared dish. Bake at 375°F (190°C) for 25-30 minutes
  3. Make the Mashed Potatoes: Boil the potatoes in salted water until fork-tender. Drain, then mash with warm milk, melted butter, salt, and pepper
  4. Assemble the Casserole: Remove the partially baked meatloaf and sprinkle with cheddar and mozzarella cheese
  5. Top with Mashed Potatoes: Spread the mashed potatoes over the cheese layer
  6. Final Bake: Bake for an additional 20-25 minutes until the topping is golden brown and the cheese is melted
  7. Rest and Serve: Let the casserole rest for 10-15 minutes before slicing and serving
