Ingredients
2 pounds Lean Ground Beef
1 medium Yellow Onion, finely diced
3 cloves Garlic, minced
1 large Egg, lightly beate
½ cup Plain Breadcrumbs
½ cup Milk, whole or 2%
2 tablespoons Ketchup
1 tablespoon Worcestershire Sauce
1 teaspoon Dried Oregano
1 teaspoon Dried Thyme
½ teaspoon Salt
¼ teaspoon Black Pepper
3 pounds Russet Potatoes, peeled and cut into 1-inch chunks
½ cup Milk, whole or 2%, warmed
¼ cup Unsalted Butter, melted
½ teaspoon Salt
¼ teaspoon Black Pepper
2 cups Shredded Sharp Cheddar Cheese
1 cup Shredded Mozzarella Cheese
Instructions
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, diced onion, minced garlic, beaten egg, breadcrumbs, milk, ketchup, Worcestershire sauce, dried oregano, dried thyme, salt, and black pepper
- Form and Initial Bake: Lightly grease a 9×13-inch baking dish. Press the meatloaf mixture evenly into the prepared dish. Bake at 375°F (190°C) for 25-30 minutes
- Make the Mashed Potatoes: Boil the potatoes in salted water until fork-tender. Drain, then mash with warm milk, melted butter, salt, and pepper
- Assemble the Casserole: Remove the partially baked meatloaf and sprinkle with cheddar and mozzarella cheese
- Top with Mashed Potatoes: Spread the mashed potatoes over the cheese layer
- Final Bake: Bake for an additional 20-25 minutes until the topping is golden brown and the cheese is melted
- Rest and Serve: Let the casserole rest for 10-15 minutes before slicing and serving
