Description
These Crumbl-style carrot cake cookies are soft, spiced, and topped with rich cream cheese frosting—just like the real thing, but with a homemade twist.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp salt
1 ½ cups finely shredded carrots
½ cup chopped walnuts or pecans (optional)
½ cup golden raisins (optional)
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
2. Cream butter and sugars until fluffy.
3. Add eggs and vanilla; beat well.
4. Whisk flour, baking soda, powder, cinnamon, nutmeg, salt.
5. Mix dry ingredients into wet mixture gradually.
6. Fold in shredded carrots, optional nuts and raisins.
7. Scoop dough (¼ cup each), slightly flatten.
8. Bake 12–14 minutes until golden; cool 5 mins on sheet, then transfer.
9. Beat cream cheese and butter until smooth; add sugar and vanilla, beat again.
10. Frost cooled cookies and chill if needed for firmer swirl.
Notes
You can reduce calories by halving the frosting or using light cream cheese.
