Description

These Carrot Cake Cream Cheese Bars offer the moist, spiced goodness of traditional carrot cake, topped with a rich cream cheese layer, all in an easy-to-grab format. Perfect for casual family desserts, potlucks, or brunches.


Ingredients

1 ½ cups All-Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
1 teaspoon Ground Cinnamo
½ teaspoon Ground Nutmeg
¼ teaspoon Ground Ginger
¼ teaspoon Ground Cloves
¾ cup Granulated Sugar
½ cup Light Brown Sugar
½ cup Vegetable Oil
2 large Eggs
1 teaspoon Vanilla Extract
2 cups Finely Grated Carrots
8 ounces Full-Fat Cream Cheese, softened
½ cup Unsalted Butter, softened
2 cups Powdered Sugar
1 teaspoon Vanilla Extract for cream cheese


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan, lining with parchment paper
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves
  3. In a large bowl, combine granulated sugar, light brown sugar, and vegetable oil. Whisk until smooth, then add eggs one at a time, whisking after each. Stir in vanilla extract
  4. Gradually mix the dry ingredients into the wet ingredients until just combined; do not overmix
  5. Fold in the grated carrots until evenly distributed
  6. In another bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and mix until creamy, then stir in the vanilla extract
  7. Pour ¾ of the cake batter into the prepared pan. Drop spoonfuls of the cream cheese mixture over it, then dollop remaining batter and swirl together gently
  8. Bake for 30-35 minutes or until a skewer comes out with moist crumbs. Let cool completely in the pa
  9. Chill in the refrigerator for at least 2 hours before slicing into bars
