Ingredients
1 ½ cups All-Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
1 teaspoon Ground Cinnamo
½ teaspoon Ground Nutmeg
¼ teaspoon Ground Ginger
¼ teaspoon Ground Cloves
¾ cup Granulated Sugar
½ cup Light Brown Sugar
½ cup Vegetable Oil
2 large Eggs
1 teaspoon Vanilla Extract
2 cups Finely Grated Carrots
8 ounces Full-Fat Cream Cheese, softened
½ cup Unsalted Butter, softened
2 cups Powdered Sugar
1 teaspoon Vanilla Extract for cream cheese
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan, lining with parchment paper
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves
- In a large bowl, combine granulated sugar, light brown sugar, and vegetable oil. Whisk until smooth, then add eggs one at a time, whisking after each. Stir in vanilla extract
- Gradually mix the dry ingredients into the wet ingredients until just combined; do not overmix
- Fold in the grated carrots until evenly distributed
- In another bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and mix until creamy, then stir in the vanilla extract
- Pour ¾ of the cake batter into the prepared pan. Drop spoonfuls of the cream cheese mixture over it, then dollop remaining batter and swirl together gently
