These Caprese Pesto Puff Pastry Bites are an elegant, effortless appetizer bursting with harmonious flavors from basil pesto, fresh cherry tomatoes, and creamy mozzarella, all enveloped in flaky, buttery puff pastry.
Ingredients
1 sheet frozen puff pastry (thawed according to package directions)
½ cup basil pesto
1 cup cherry or grape tomatoes (halved)
5 ounces fresh mozzarella pearls (drained and halved if large)
¼ cup fresh basil leaves (thinly sliced or roughly chopped, for garnish)
1 large egg (beaten with 1 tablespoon water for egg wash)
1 tablespoon olive oil (for brushing)
Salt and freshly ground black pepper (to taste)
Optional: Balsamic glaze (for drizzling)
Instructions
- Thaw puff pastry and unroll it onto a floured surface
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
- Spread a thin layer of basil pesto over the puff pastry, leaving a border
- Arrange halved cherry tomatoes and mozzarella pearls evenly on the pesto
- Cut the pastry into 16-20 small squares or rectangles
- Transfer each square to the prepared baking sheet with space between them
- Brush puff pastry with the egg wash
- Season with salt and pepper
- Bake for 15-20 minutes, or until golden brown and puffed
- Remove from oven and garnish with basil leaves and balsamic glaze if desired
