A nourishing Cabbage Detox Soup that is low in calories yet high in flavor and nutrients, perfect for a light meal or to reset your system.
Ingredients
1 tablespoon Olive Oil
1 large Yellow Onion, chopped
2 cloves Garlic, minced
2 Carrots, peeled and diced
2 Celery Stalks, diced
1 medium head Green Cabbage, cored and chopped
1 (14.5-ounce) can Diced Tomatoes, undrained
6 cups Vegetable Broth
1 teaspoon Dried Oregano
1/2 teaspoon Dried Thyme
1/2 teaspoon Black Pepper
1/4 teaspoon Sea Salt
1 Bay Leaf
1 cup Fresh Parsley, chopped for garnish
Instructions
- Sauté the chopped onion in olive oil until softened
- Add minced garlic, diced carrots, and diced celery, and cook until slightly softened
- Stir in chopped cabbage and the can of diced tomatoes
- Add vegetable broth, oregano, thyme, black pepper, sea salt, and bay leaf; stir to combine
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender
- Remove bay leaf and serve garnished with fresh parsley
