Description

A nourishing Cabbage Detox Soup that is low in calories yet high in flavor and nutrients, perfect for a light meal or to reset your system.


Ingredients

1 tablespoon Olive Oil
1 large Yellow Onion, chopped
2 cloves Garlic, minced
2 Carrots, peeled and diced
2 Celery Stalks, diced
1 medium head Green Cabbage, cored and chopped
1 (14.5-ounce) can Diced Tomatoes, undrained
6 cups Vegetable Broth
1 teaspoon Dried Oregano
1/2 teaspoon Dried Thyme
1/2 teaspoon Black Pepper
1/4 teaspoon Sea Salt
1 Bay Leaf
1 cup Fresh Parsley, chopped for garnish


Instructions

  1. Sauté the chopped onion in olive oil until softened
  2. Add minced garlic, diced carrots, and diced celery, and cook until slightly softened
  3. Stir in chopped cabbage and the can of diced tomatoes
  4. Add vegetable broth, oregano, thyme, black pepper, sea salt, and bay leaf; stir to combine
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender
  6. Remove bay leaf and serve garnished with fresh parsley

Feel free to substitute vegetables based on availability.
