Ingredients
1 loaf Artisanal Bread (sourdough, ciabatta, or good quality white bread), sliced into 1/2-inch thick pieces

1 1/2 cups Ripe Roma Tomatoes, finely diced (about 3–4 medium tomatoes)
1/4 cup Fresh Basil Leaves, thinly sliced (chiffonade)
1 tablespoon Olive Oil (extra virgin is preferred)
1/2 tablespoon Balsamic Glaze or Vinegar
1/4 teaspoon Salt, or to taste
1/8 teaspoon Black Pepper, or to taste
8 slices Fresh Mozzarella Cheese, thinly sliced (about 8 oz total)
4 slices Provolone Cheese (about 4 oz total)
Instructions
- Prepare the Bruschetta Topping: In a medium bowl, combine the finely diced Roma tomatoes, thinly sliced fresh basil, 1 clove of minced garlic, olive oil, and balsamic glaze or vinegar. Season with salt and black pepper to taste. Stir everything gently to combine and allow this mixture to sit for at least 10-15 minutes at room temperature
- Prepare the Bread and Garlic Butter: In a small bowl, mix the softened unsalted butter with the remaining 1 clove of minced garlic until thoroughly combined
- Assemble the Sandwiches: Spread the garlic butter on one side of each slice of bread. On four of the slices (buttered side down), layer two slices of fresh mozzarella cheese and one slice of provolone cheese. Spoon a generous amount of the bruschetta topping over the cheese, then place the remaining bread slices on top (buttered side up)
- Preheat Your Pan: Heat a large non-stick skillet or griddle over medium-low heat
- Grill the Sandwiches: Carefully place the sandwiches in the preheated pan and cook for 4-6 minutes per side, or until the bread is golden brown and crispy, and the cheese is completely melted
- Serve Immediately: Once cooked, slice the sandwiches diagonally and serve immediately
