Instructions

  1. Prepare the Bruschetta Topping: In a medium bowl, combine the finely diced Roma tomatoes, thinly sliced fresh basil, 1 clove of minced garlic, olive oil, and balsamic glaze or vinegar. Season with salt and black pepper to taste. Stir everything gently to combine and allow this mixture to sit for at least 10-15 minutes at room temperature
  2. Prepare the Bread and Garlic Butter: In a small bowl, mix the softened unsalted butter with the remaining 1 clove of minced garlic until thoroughly combined
  3. Assemble the Sandwiches: Spread the garlic butter on one side of each slice of bread. On four of the slices (buttered side down), layer two slices of fresh mozzarella cheese and one slice of provolone cheese. Spoon a generous amount of the bruschetta topping over the cheese, then place the remaining bread slices on top (buttered side up)
  4. Preheat Your Pan: Heat a large non-stick skillet or griddle over medium-low heat
