Ingredients

2 tablespoons All-purpose flour (for filling)
1 ½ teaspoons Ground cinnamon (for filling)
¼ cup Unsalted butter, melted (for filling)
2 tablespoons Milk (any kind, for filling)
½ teaspoon Vanilla extract (for filling)
1 ½ cups Powdered sugar, sifted (for glaze)
3–4 tablespoons Milk (any kind, adjust for glaze consistency)
½ teaspoon Vanilla extract (for glaze)
Instructions
- Prepare the Cookie Dough: Whisk together the flour, baking powder, and salt, then cream together butter and sugars. Beat in egg and vanilla, add dry ingredients. Chill the dough for at least 1 hour
- Make the Brown Sugar Filling: Combine brown sugar, flour, and cinnamon, then add melted butter, milk, and vanilla extract
- Assemble the Cookies: Roll out one disc of dough, cut rectangles, fill with brown sugar filling, and seal with another dough rectangle. Poke vent holes
- Bake the Cookies: Bake at 350°F for 12-15 minutes until edges are golden. Cool on wire rack
- Prepare and Apply the Glaze: Mix powdered sugar, milk, and vanilla extract for glaze. Drizzle over cooled cookies
