Ingredients

1 pound (450g) chickpea pasta (e.g., penne, fusilli, or rotini)
2 tablespoons Olive oil, plus extra for drizzling
1 large head of Broccoli (about 1.5 pounds / 680g), cut into bite-sized florets
1 can (15 ounces / 425g) Chickpeas, rinsed and drained
4 cloves Garlic, minced
1/2 teaspoon Red pepper flakes (optional, for a kick)
1/4 cup Vegetable broth (or pasta water)
2 tablespoons Fresh lemon juice
1/4 cup Fresh parsley, chopped
Salt to taste
Black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss the broccoli florets with 1 tablespoon of olive oil, a generous pinch of salt, and black pepper. Spread them in a single layer on the prepared baking sheet
  2. Roast the broccoli for 15-20 minutes, or until tender-crisp and slightly charred at the edges
  3. While the broccoli roasts, bring a large pot of salted water to a rolling boil. Add the chickpea pasta and cook according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining
  4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant
  5. Add the rinsed and drained chickpeas to the skillet and sauté for 2-3 minutes
  6. Pour in the vegetable broth (or reserved pasta water) and fresh lemon juice. Stir well and let it simmer for 1-2 minutes
  7. Add the cooked chickpea pasta and the roasted broccoli to the skillet. Toss everything together vigorously
  8. Stir in the fresh chopped parsley and adjust seasoning with salt and black pepper as needed. Serve immediately
