Description

Quick, creamy Broccoli Cheddar Soup made without cream—comforting, wholesome, and ready in under 30 minutes.


Ingredients

1 tbsp butter or olive oil

1/2 small onion, diced

1 clove garlic, minced

2 cups chopped broccoli florets

1 small carrot, grated

2 tbsp all-purpose flour

2 cups low-sodium broth

1 cup milk

1 cup shredded sharp cheddar cheese

Salt and pepper to taste


Instructions

1. Melt butter in pot; sauté onion and garlic until soft.

2. Add broccoli and carrot; cook 3 minutes.
