Ingredients
1 tbsp butter or olive oil
1/2 small onion, diced
1 clove garlic, minced
2 cups chopped broccoli florets
1 small carrot, grated
2 tbsp all-purpose flour
2 cups low-sodium broth
1 cup milk
1 cup shredded sharp cheddar cheese
Salt and pepper to taste
Instructions
1. Melt butter in pot; sauté onion and garlic until soft.
2. Add broccoli and carrot; cook 3 minutes.
3. Stir in flour; cook 1 minute.
4. Whisk in broth and milk; simmer until broccoli is tender.
5. Add cheese and stir until creamy.
6. Season and serve warm.
