0.25 teaspoon Salt
0.5 cup Unsalted butter, softened
0.75 cup Granulated sugar
2 large Eggs, at room temperature
1 teaspoon Pure vanilla extract
0.75 cup Milk, at room temperature
0.5 cup Smooth Lotus Biscoff spread, melted
0.5 cup Lotus Biscoff cookies, crushed


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pa
  2. Whisk together the all-purpose flour, baking powder, ground cinnamon, and salt
  3. Beat together the softened butter and granulated sugar until light and fluffy
  4. Add eggs one at a time, then mix in vanilla extract
  5. Alternate adding the dry ingredients and milk, mixing until just combined
  6. Fold in melted Lotus Biscoff spread and crushed cookies
  7. Pour batter into the prepared pan and swirl in some additional Biscoff spread
  8. Bake for 50-60 minutes or until a toothpick comes out clea
  9. Cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely
  10. Prepare the optional glaze by mixing powdered sugar, milk, and melted Biscoff spread, then drizzle over the cooled cake

Notes

For a chocolate variation, swirl in melted chocolate with the Biscoff spread.
